Sodium hexametaphosphate is used in meat products, fish sausages, ham, etc. to improve water retention, increase adhesion and prevent fat oxidation; it is used in dairy products and beverages to prevent gel precipitation. In addition, sodium hexametaphosphate aqueous solution sprayed on cured meats can improve corrosion resistance.
